Originated from Nishi-Azabu in Tokyo, La Bombance is founded in 2004 by Chef Makoto Okamoto. As a popular spot among trendsetters and celebrities such as Ken Watanabe and Hidetoshi Nakata, its signature “New Japanese Cuisine” always focuses on seasonality, technique, with a touch of French influence and the passion in hospitality.

With a name meaning “the one and only”, Mu-ni by La Bombance specialises in Japanese cuisine and aims to create a one-of-a-kind dining experience in Hong Kong. The brand provides a wide range of lunch sets and seasonal omakase menus, which feature gourmet ingredients including tuna, sea urchin, Wagyu, sea eel and Splendid alfonsino, delighting diners in the city. Akira Ito – Chef de Cuisine

Born in Miyazaki Prefecture, Japan, Chef Akira Ito has worked in various Japanese restaurants and high-end hotels in Tokyo, which prepared him to be a professional that has excellent culinary skills and 10 years of experience in Japanese cuisine. In order to broaden his knowledge in the culinary journey, Chef Ito accepted a challenge and has worked in a customer service position. In 2016, he has become an exceptional chef, managing 3 restaurant branches at the same time. Since then, Chef Ito participates in overseas activities actively from time to time to promote the Japanese food culture to the world.
