Two-Michelin-Starred Hommage Making its Debut in Hong Kong

with a 3-Day Four Hands Event at Ta Vie 旅 This Fall

Ta Vie 旅announces its first degustation event in fall 2018 with its first-ever collaboration with Chef Noboru Arai of Hommage in Tokyo, which has been newly awarded with Michelin two stars in the Michelin Guide Tokyo 2018. Joining forces with Chef Hideaki Sato, a 10-course “Four Hands” degustation dinner will be served exclusively from September 6 – 8, 2018, while a 7-course lunch will also be served on the last day of the event, September 8, 2018.

Operating for 17 years, Chef Arai opened Hommage in his home town, Asakusa, the historical district in Tokyo, in 2000 after returned from his training in France, including the renowned Le Close des Cimes and Auberge la Feniere. To aim at honoring the home-grown ingredients through modern French cooking, the cuisine is an expression based on the ingredients and the root of Chef Arai’s experience in France, the cultural connection to Japan and the exposure to rest of the world, presenting a refined taste of the seasonal ingredients, which is very much similar to Chef Sato’s cuisine that celebrates best flavour of Asian produce with modern French cooking technique.

Speaking of the collaboration, Chef Hideaki Sato, head chef and co-owner of Ta Vie 旅 shared with excitement, “partnering with Chef Arai marks my first-ever collaboration with an esteemed French chef in Japan, who is one of the most influential forces of today’s French culinary scene in Tokyo. What makes Hommage so special to me is Chef Arai runs his restaurant with his wife like a family restaurant in the humble old town, Asakusa instead of the cosmopolitan side of Tokyo where top restaurants are cluttered, which makes it relatively less well-known to Hong Kong’s diners yet has already made its name across Japan, even in the international culinary scene with the coveted Two Michelin Stars. Given both myself and Chef Arai share a similar background and philosophy in our cuisines, it does not only give us the opportunity to exchange our vision and passion but also offers food lovers an incredibly unique dining experience.”

Paying homage to the local flavour and ingredients, Chef Sato will create four new dishes which are inspired by the theme, “My City, The Local Central”. Discerning guests will be expected to have a taste of some local delicacy like shrimp wontan and egg tart with a new perspective. At the same time, Chef Arai is showcasing his signature including:

• Cherry tomato salad with homemade mozzarella cheese and burrata cheese sherbet

• Daikon rolls filled with shima-aji with fresh cheese sauce

• Shallow fried amadai fish with bean sprouts and green onion sauce

• Cold duck foie gras with green tomato, ginger, iburigakko and baby herbal leaves

• “漢方牛” Free range beef from Miyagi, zucchini, marinated sardine, laurel and anchovies sauce

• Riz au lait: sake jelly, ice cream, fresh raspberry and lychee mousse
